Recover messages on iPhone SE

I was suspicious that something was amiss on my account so I "signed out of everything" AND ALL MY MESSAGES DISAPPEARED! I feel faint....my life is over.... (I am half kidding...).

I Will be eternally grateful if someone can help walk this ignorant person through how to get them back AND WHY DID THEY DISAPPEAR?

Hello,

-What version of iOS?
-Signed out of everything meaning iCloud?
-Do you remember what settings you had set in iCloud/Messages on the iPhone - i.e. Enable Messages in iCloud enabled and Message History - Keep Messages 30 Days/1 Year/Forever?
-Do you have a Mac and use iCloud and the Messages app on it?

It took 3 days of sheer terror with no clue what happened. Then I shut it off and when it restarted MY MESSAGES WERE BACK! Thank you to to ANYONE who tried to help, bless you!!! I have a iPhone SE and do not really want to up grade.
