No One-Click? Patchy Drag & Drop?

On my old humpback iMac I used to be able to choose whether use one click or two. I was alsoable drag & dropat lightning speed from web pages.
Now I have a new MacBook& none of this seems to work. Is it me? Or has something changed? Does anyone have an answer?
