Tried to restore el Capitan. Old user name still appears...

I am very new to this mac os thing.
So here is the deal I got a old mac. I tried to do a restore on the box. I got a message that the OS wasn't available or something to that effect.
With that said I reset the password for the pervious owner and added my new admin account and deleted the old admin account ( I think I choose to save old files etc).
I thought all was good however under the "devices" in the "Mac os x system" tab thingy . I still seen the old user name as well in other places.
I thought I could do a clean factory install (what I really want to do) however, I am unsure how to do this.

What in the hell am i missing????

• Is there any data you need to save?
• Do you have an external USB drive you could use to create an installer?
