Update Ventura in old Mac

Yes, and no. It depends on the model of your Mac. I have successfully updated my MacBook Pro Retina 13" Early 2015 (12,1) and iMac 27" Late 2015 (17,1) to Ventura 13.5 using OCLP 0.6.8. The newer versions of OCLP don't require nearly as much technical expertise as before. You can go check whether your Mac model is compatible. https://dortania.github.io/OpenCore-Legacy-Patcher/
