Replacement hard drive

I am replacing the internal hard drive in my G-4. I have a Lacie external drive. I want to keep only my Itunes and e-mails in tact from old hard drive and restore those to the new replacement drive. I do not want any of the other data, downloads or anything other than Itunes and email and adresses on the new hard drive.


1) How do I save the Itunes and email data to restore, and

2) How do I restore that data once I have installed the new drive and loaded OX
