Notes Formatting

Every time I start a new Note or open an existing Note the text defaults to the same shade of grey instead of black even if I had changed it to black the last time it was opened. No amount of experimenting with styles and colors can get the application to default to black text. What am I doing wrong?

-Which version of OS X/macOS?
-Do you mean in the Notes app?

I'm running MacOS Mojave 10.14.2 on a 3.1GHz Intel Core i7 iMac and the problem is with the native Apple Notes app.
