We have a Mid 2007 20" iMac, running El captain (10.11.6), and plan to replace it with a new iMac. We do have Time Machine backups on an external drive.

Will we have any problems transitioning to the new M2 -4 architecture? How about recovering emails?

Using Migration Assistant will transfer everything across from your iMac. However, MacOS went 64 bit from 10.15(Catalina) onwards, so any Apps that you have that are 32 bit, will not work.

Transfer to a new Mac with Migration Assistant – Apple Support (UK)

Migration Assistant transfers documents, apps, user accounts and settings from one Mac to another. It doesn’t delete information from your old Mac or replace the operating system (macOS) on your new Mac.
