Ever since upgrading Mac won't up or save documents

So recently (I think since upgrading to Catalina), I am not able to open or save documents (I've tried excel and word). When I click on them to open nothing happens. When I try to save a document I get an error message that says "The file “Documents” couldn’t be opened." Notably, I CAN save/open documents to the "home" location, just not the desktop or the documents folder. Also, as soon as I restart the computer everything works normally including opening and saving documents. It works normally for a few hours and then stops working again. Any ideas?
