Sounds like you have iPhone sync via Wi-Fi enabled, which is why it shows up in Finder: Sync content between your Mac and iPhone, iPad, or iPod touch over Wi-Fi. You will need to use the sync function to remove music from your iPhone: Sync content between your Mac and iPhone, iPad, or iPod touch.
