Where do I find application download settings

When I open a CSV file it defaults to numbers. Where do I go to change that? I looked in System prefs and did not see anything.

Hello and welcome.

Right-click on the CSV file and choose Get Info. In the section labeled Open with:, click on Numbers and a drop-down list with applications will appear. Choose the application you want, then click the Change All... button, then Continue button.
