Reverse file order?

We are going to take a documentary series of photos during an around-the-world cruise. To keep track my wife and I will create a dedicated e-mail account so we can send photos from any of our devices to a common cache. Is there any way to reverse the timeline on saved files, so newer files are added to the bottom by date/time.

The trip will be three years at sea, every continent, 135 countries, and 375 ports of call, so there will be a LOT of photos taken over 1,095 days!

Also, how do we attach text to the photo file frame by frame?

That's quite the endeavor.
How are you wanting to access these photos?
Would you want it to be accessible to the public?
For invited viewers like family, maybe something rather simple like a shared album in iPhoto?
Or a more elaborate solution would be a custom website where you could upload photos with captions and file them chronologically.

That last option would require a good deal of programming and forethought and would most probably be the most expensive option, but if you're sailing around the world and want to share your adventure, that would be doing it up right.
