Unfortunately the 2019 MacBook Pro has the T2 security chip in it and the only way to turn off the activation lock is to enter the AppleID and password of the account that had FindMy enabled before you erased it.
Apple is unable to do anything even with Proof of Purchasing the MacBook Pro.
You shouldn't need to reset the password, you just need to know it and enter it at the Activation Lock screen.
