My iPhone is going psycho. I've come to the end of my tether with it and realise I need to wipe it clean. How do I back this up before I wipe and reinstall?

It's an iPhone 6, 128GB version of OS 11.3.1.
It's going psycho, as in just having a spasm, doesn't allow me to control it, it controls me. It's like I imagine tripping would be like! I took a video of it, but can't move the vid from my photos file. Apparently it's too large.
I have an ICloud account but don't like using it... don't know how to use it. Prefer to back up to iTunes or such.
