Apple Mail rules and auto filing

I used to be able to set up rules and direct common subject emails to folders to keep down the clutter. Well, I guess that's a habit of the past and have been struggling to find something that will work to replace mail. I know you can set up rules server side, but that doesn't appear to be very reliable.

Can anybody give me some suggestions or maybe some assistance to help my brain comprehend?
