I'm looking to change around the way I work and just use my late 2013 27" iMac as a screen with a new macBook pro. I've been told that this might not work with the new MacBook pro. Any thoughts?

Hello and welcome.
Use your iMac as a display with Target Display Mode
It looks like it should work. You would need an Apple Thunderbolt 3 (USB-C) to Thunderbolt 2 Adapter and a Thunderbolt or Mini DisplayPort to Mini DisplayPort cable.
