Hello and welcome.
Unfortunately, we don't support Windows.
But, it looks to me from the screenshots, that the display settings are corrupted or set too low in Windows/Parallels. It looks lit 8-bit color to me, instead of 16 or 32-bit color.
-Check the Display settings in Control Panels
-Make sure the Parallels Tools are installed/up-to-date
-Does it do the same when not in Coherence mode?
If those suggestions don't correct the issue, I would post this on the Parallels Forums.
