I want to take parallels out of my Mac and use Boot Camp. Should I uninstall parallels and Windows 7 before I set up Boot Camp or install Boot camp first then uninstall parallels

Yes.

I prefer Parallels over BootCamp, when boot goes wrong it's a nightmare. Parallels you can just start again...
