Adding music and video files from a Synology NAS to Apple’s Music and TV apps using COPY and PASTE, deletes them from the NAS! I've tested this and COPY actually moves the folders and files to the app, not copy.

I have a feeling you have to set up an iTunes server on the NAS first. That's easy - just install and configure iTunes server on your NAS. I stream exclusively now so no longer access my NAS like this. That way you don't have to move the files and can keep them on your NAS.

I am making the assumption you are trying to play the music files on your NAS? I can't speak to video as I don't have anything in Apple TV on my NAS.
