I have installed the latest java update but I still get error messages when trying to watch things online telling me I need the latest software. I already have the latest update!

It's driving me mental!

Have you tried disabling the Java web plug-in in Safari, follow these steps:
1) In Safari, choose Safari > Preferences
2) Uncheck (deselect) "Allow Java".
3) Close the Safari preferences window.

Also do not think it is your issue more than lightly the few sites you have encountered have a problem. And personally I would leave Java deselected.
