I cannot screen record video on Catalina using Quick time. I only get audio.

I am screen recording some tutorials, and I am able to get both audio and video on some, but on others I can only get audio. How can I change it to get both audio and video?

Double check that the desktop setting is always selected (as my screen shot), mine seems to default to QT Player for some reason.
