Record call from landline phone to late 2009 Mac Mini

I listened to a public conference call today and wanted to record it for
my boss (who was otherwise entertained and couldn't attend).

On the spur of the moment, and not having much equipment or cables, I
put my landline phone on speakerphone and then put the mic of my USB
headset near the phone's speaker and recorded it that way, using the USB
mic as the input for my Audio Hijack application. (which actually worked
    rather well, BTW)

My question is, could I have instead done this using a 2.5mm male to 3.5
mm male adapter cable, to connect my phone's 2.5 mm headset jack
directly to my late 2009 Mac Mini's 3.5mm Audio in/optical audio in
    port?

I don't know why it wouldn't work but I'm not sure.
    Thoughts? Suggestions? Pro's/con's?
