If you have two screens in use, how do you control what appears on each one?

If I set up my Mac Book Pro to use an external monitor as well as the laptop screen, how do I control what appears on each screen? Can everything be put onto one screen without mirroring?

How do I go from one screen to another to access whatever applications are open on each one?

Is it possible to turn off the laptop screen altogether?

You drag the Windows onto the second monitor.

Yes

You move the cursor off the edge of one monitor onto the next, how ever you set them up in System Preferences > Monitors

Is it possible to turn off the laptop screen altogether?
If it supports close lid mode operation you just shut the lid, but I would not do this as the open laptop keeps cooler. This requires an external Keyboard.
