Ipod/ibook Memory Probs

So, I just got a lovely new ipod. Updated the latest itunes software on my otherwise defunct 2001 ibook to let it accept the new ipod. Thought that was the hard bit done...
I downloaded my full itunes library of 1,100 songs (the most my ibook's memory can hold before I have to start deleting songs). Obviously the Ipod can hold 30Gb so there's a lot of room left. I deleted some of the songs on my itunes library to make room for new ones but when I plugged in my ipod, it did a complete update of my library, deleting the ones I had deleted from the itunes library.
I need to know how I can do a selective update to only update certain new songs to allow me to keep filling the ipod and not having it delete songs each time, else I'll never get more than 1,100 songs on it. I could untick every single song on the itunes library but that would take forever! Is there any quick way to change the settings so it doesn't automatically update my ipod with everything on itunes and I can keep filling it with new songs?
ALSO!!! I tried to upload some photo's to my ipod from iphoto library... My ibook screen said it was downloading them to the ipod but after that was 'done' no photo's were on my ipod. Confused and frustrated!!!

okay i am a bit rusty and my macintosh software is in dutch so that works against me
but in the preferences menu ( apple + ; ) you can disable the automatic synchronisation which keeps the ipod upto date with the itunes library
a very annoying feature i always thought

also what version of itunes are you using ?
and just for clarifications sake
memory is usually reserved for the ram ( ram memory )
hd space is just that hd space

just to avoid confusion
